The Gourmet Hog Roast Company arrive 6-7 hours prior to the pre-arranged carving time and set up the spit roast machine, tables, gas, electric. 1 to 2 members of our staff will then stay with the free range pigs throughout the whole cooking process ensuring the meat is adequately basted and that the crackling crisps up properly.
An hour before the serving time the gas is turned off to allow 20-25 minutes for the hog roast to rest and the juices to settle. Carving of the meat then takes about 30-40 minutes when we let the meat fall into the bottom of the roasting machine before we add the Gourmet Hog Special Sauce. From there the meat is ready to be served buffet style.
